Recipe from the warehouse: Strawberry Benne Seed Waffle from SNOB’s Megan Hutchinson

This month, Slightly North of Broad Executive Sous Chef Megan Hutchinson is sharing her recipe for a strawberry benne seed waffle. Ripe local strawberries are combined with fluffy batter and benne seeds and topped with warm maple syrup and a splash (or two) of bourbon. Megan doesn’t skimp on a scoop of vanilla ice cream, too. Drool.

Strawberry Benne Seed Waffle

Wet ingredients

  • 2 cups all-purpose flour
  • 1 tbs. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ cup toasted benne seeds

Dry ingredients

  • 4 eggs
  • 1 cup whole milk
  • 1 cup crème fraiche
  • 1/4 cup butter melted
  • 1 cup ripe strawberries- rough chopped

Whisk together wet and dry ingredients separately. Fold wet ingredients into the dry until just combined. Use conventional iron to make the waffles. Top the waffles with maple syrup warmed up with a splash or two of bourbon and top with vanilla ice cream.
